granola bars… a starting point.

The other day, I made my very first batch of granola bars! I didnt really like the Quaker Oat ones, and as it was, if I was packing one into our lunches each week, it would be about $8.50 in granola bars a week! So, I’d done some researching. This recipe isnt quite worked out all the way, but the awesome part is- you can put pretty much anything you want to in it. I decided to put in mini chocolate chips this time. (lets not talk about the awesome chocolate cravings I have when I nurse my babies. lol)

3 cups of quick cooking oats
1/2 cup brown sugar (I plan on decreasing this to a 1/3, as the bars were still a bit sweet for my taste)
1/2 cup wheat germ (for those of you in the SLC area, you can get this at Kitchen Kneads on Redwood Road and 73-ish south…)
1 cup flour (white or wheat…)
1/2 cup mini chocolate chips
3/4 tsp salt
1/2 cup honey
1 egg, beaten
1 cup applesauce
2 tsp vanilla extract

Mix all of the dry ingredients together. Make a little hole in the center, add the wet ingredients and mix everything. I used a big spoon. Put it in a 9×13 pan (I greased my pan…. but next time I think I’ll do parchment paper. That way my granola bars dont have non-stick spray on the bottom. lol) Then bake in a 350* oven for 20-30 minutes. (again, the cook time depends on how you want your granola bars. I did about 25 min, mine were chewy-like.) Then I just wrapped mine in wax paper, tied with twine, and I stored them in the fridge. Not sure what kind of shelf like they have or what! ;) (oh and you know what twine is just the cutest? the twinery. seriously, im ordering these in all sorts of colors!

Anyway, like I said, a starting point. Im sure I’ll tweak this as I go along, but I know there were a lot of my facebook friends who wanted a copy of this! Let me know if you have questions, and I’ll try and answer best I can! :)

blog post?! wow… its only been about 5 months! ;) the last 5 months have been wonderful. but- usually after i have my babies, it takes me a long time to feel ‘me’ again. (am i the only one out there? i sure hope not.) i just dont have the energy to do everything i did before. and im sure that has to do with lack of sleep. ;) but- ava is almost sleeping through the night. she is only up twice a night now. (it usually takes me kiddos about 6 months or so to sleep through the night.) and im finally feeling like ‘me’ again.

just 6 weeks before i had ava, we moved into our house. it was just a scramble to get moved in… but fast forward to now, and im finally getting things put together. in fact, i *think* all our boxes have been unpacked, and most everything has found a permanent place! ;) one of my new favorite things to do (in the middle of the night and those late feedings) is browse pinterest. have you been here? oh my. its like inspiration central. i saw this post from the jones design company. and i just loved it! she even has the template for a free download. i decided it would be perfect for my drab boring living room wall.

so i did it. and i learned a few things along the way. i printed my template pretty large. i did a 200% enlargement on my home printer. so it covered the span of 4 papers taped together. i think it was about 12 inches total width.  i wanted to go for something bold.  i didnt transfer it to cardboard either… i just coudnt cut it out to be as precise. also, in the original post, they had doubled up the stencil. and becuase i am short on time… i decided to just do the single template. another thing i learned was… its gotta be straight! maybe its just the perfectionist in me, but i just had to find a way to make it straight. so… we measured, and did a chalk line grid on the wall. worked perfectly. i traced it one night, then the next afternoon during ava’s nap, i painted. done and done! well… almost anyway. i still have a few more things to do in the living room, but all in all- a few hours, some elbow grease and i have a totally new looking wall!
