The other day, I made my very first batch of granola bars! I didnt really like the Quaker Oat ones, and as it was, if I was packing one into our lunches each week, it would be about $8.50 in granola bars a week! So, I’d done some researching. This recipe isnt quite worked out all the way, but the awesome part is- you can put pretty much anything you want to in it. I decided to put in mini chocolate chips this time. (lets not talk about the awesome chocolate cravings I have when I nurse my babies. lol)

3 cups of quick cooking oats
1/2 cup brown sugar (I plan on decreasing this to a 1/3, as the bars were still a bit sweet for my taste)
1/2 cup wheat germ (for those of you in the SLC area, you can get this at Kitchen Kneads on Redwood Road and 73-ish south…)
1 cup flour (white or wheat…)
1/2 cup mini chocolate chips
3/4 tsp salt
1/2 cup honey
1 egg, beaten
1 cup applesauce
2 tsp vanilla extract
Mix all of the dry ingredients together. Make a little hole in the center, add the wet ingredients and mix everything. I used a big spoon. Put it in a 9×13 pan (I greased my pan…. but next time I think I’ll do parchment paper. That way my granola bars dont have non-stick spray on the bottom. lol) Then bake in a 350* oven for 20-30 minutes. (again, the cook time depends on how you want your granola bars. I did about 25 min, mine were chewy-like.) Then I just wrapped mine in wax paper, tied with twine, and I stored them in the fridge. Not sure what kind of shelf like they have or what!
(oh and you know what twine is just the cutest? the twinery. seriously, im ordering these in all sorts of colors!
